Ingredients

  • 1 cup rehydrated wakame seaweed
  • 1 medium cucumber (sliced into thin strips)
  • 1 medium carrot (shredded)
  • 1 red bell pepper (julienned)
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 6 rice paper wrappers

Instructions

  1. Soak dried wakame in warm water for 10–15 minutes until tender. Drain and squeeze out excess water.
  2. Slice cucumber, shred carrot, and julienne red bell pepper.
  3. In a bowl, whisk together soy sauce and rice vinegar; adjust flavors to taste.
  4. Dip each rice paper wrapper in warm water for about 10 seconds until soft. Lay flat.
  5. Place some seaweed and chopped vegetables in the center of the wrapper. Roll tightly from the bottom up, folding in sides as you go.
  6. Serve immediately or drizzle with extra soy sauce.
