  • 1 lb large fresh shrimp (peeled and deveined)
  • 6 tostada shells
  • 2 ripe avocados
  • 2 medium vine-ripened tomatoes (diced)
  • 1/4 cup fresh cilantro (chopped)
  • 2 tbsp freshly squeezed lime juice
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup red onion (diced)

Instructions

  1. Marinate shrimp in olive oil, lime juice, chili powder, salt, and pepper.
  2. Preheat the grill to medium-high heat. Thread shrimp onto skewers and grill for 2-3 minutes on each side until pink and opaque.
  3. While grilling, mash avocados in a bowl; mix in lime juice, chopped cilantro, salt, and diced tomatoes to make guacamole.
  4. In another bowl, combine diced tomatoes, red onion, cilantro, lime juice, salt, and pepper for pico de gallo; let sit for at least ten minutes.
  5. Spread guacamole on each tostada shell; top with grilled shrimp and pico de gallo.
  6. Serve immediately with extra lime wedges on the side.
