Ingredients
Scale
1 lb large shrimp (peeled and deveined)
2 ripe avocados (sliced)
3 tbsp olive oil
2 tbsp freshly squeezed lime juice
1 tsp garlic powder
1/4 tsp cayenne pepper (adjust to taste)
Salt and pepper to taste
Instructions
In a large bowl, combine olive oil, lime juice, garlic powder, cayenne pepper, salt, and pepper. Add shrimp and toss until evenly coated. Marinate for at least 15 minutes.
Preheat grill to medium-high heat (about 400°F). If using wooden skewers, soak them in water for 30 minutes.
Thread marinated shrimp onto skewers (5 per skewer) without overcrowding.
Grill shrimp for 2-3 minutes on each side until pink and slightly charred.
While grilling, slice avocados and prepare any desired toppings like diced tomatoes or chopped cilantro.
Once cooked, remove shrimp from skewers and serve alongside avocado slices in bowls. Drizzle with extra lime juice if desired.
