  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups mixed bell peppers (red, yellow, green), sliced
  • ½ cup ranch dressing (store-bought or homemade)
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 2 tbsp extra virgin olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder

Instructions

  1. Preheat oven to 400°F (200°C). Season chicken breasts with salt, pepper, chili powder, and cumin.
  2. In a large skillet over medium heat, heat olive oil and sauté sliced bell peppers for about 5 minutes until tender. Remove from skillet.
  3. In the same skillet, add more oil if needed and cook seasoned chicken for about 6 minutes per side until golden brown and cooked through. Let rest before shredding.
  4. Combine shredded chicken with sautéed peppers and ranch dressing in a bowl; mix well.
  5. Lay tortillas flat and fill each with the chicken-pepper mixture and shredded cheese; roll tightly into burritos.
  6. Place seam-side down in a baking dish; optionally sprinkle more cheese on top. Bake for about 10 minutes until golden brown.
