Red White and Blue Popsicles are the perfect summer treat, combining vibrant layers of fresh strawberries, creamy coconut milk, and juicy blueberries. These delightful popsicles not only look festive but also provide a burst of fruity flavors with every bite.

Ingredients

  • 1 cup fresh strawberries, hulled
  • 1 cup full-fat coconut milk
  • 1 cup fresh blueberries
  • 2 tbsp honey or maple syrup (adjust to taste)
  • 1 tbsp lemon juice

Instructions

  1. Blend half of the strawberries with 1 tablespoon honey and lemon juice until smooth. Pour into popsicle molds and freeze for about an hour.
  2. In a bowl, mix coconut milk with 1 tablespoon honey. Once the strawberry layer is partially frozen, pour the coconut mixture in until molds are two-thirds full. Freeze for another hour.
  3. Blend blueberries with honey and lemon juice until smooth. After the coconut layer is frozen solid, pour the blueberry mixture into molds and freeze overnight or for at least four hours.
  4. To serve, run warm water over the outside of molds to loosen and gently remove popsicles.
