  • 4 corn tortillas
  • 1 cup canned refried beans (low-sodium)
  • 1 cup shredded cheddar cheese
  • ½ cup fresh salsa
  • 1 cup shredded lettuce (iceberg or romaine)
  • 1 ripe avocado (sliced)
  • 2 tsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Arrange tortillas on the baking sheet; brush both sides lightly with olive oil.
  3. Bake tortillas for 10-12 minutes until crispy.
