  • 1/4 cup olive oil
  • 2 tablespoons kosher salt
  • 1 teaspoon black pepper
  • 3 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • 6 garlic cloves

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Rinse the turkey inside and out, pat dry, and remove giblets.
  3. Rub olive oil all over the turkey; season generously with salt and pepper inside and out. Tuck rosemary and thyme under the skin.
  4. Stuff the cavity with garlic cloves (optional).
  5. Place the turkey breast-side up on a roasting rack in a pan. Roast for 13-15 minutes per pound until golden brown.
  6. Remove from the oven at an internal temperature of 165°F (74°C) and let rest for 20-30 minutes before carving.
