  • 9 lasagna noodles
  • 2 cups fresh spinach
  • 8 oz cremini mushrooms, sliced
  • 15 oz whole milk ricotta cheese
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Spray a 9×13-inch baking dish with nonstick cooking spray.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add sliced mushrooms and cook until golden brown (about 5 minutes). Stir in fresh spinach until wilted; season with salt and pepper.
  3. In a bowl, mix ricotta cheese with salt, pepper, and half of the grated Parmesan until creamy.
  4. Spread a thin layer of marinara sauce on the bottom of the baking dish. Layer three lasagna noodles over the sauce, followed by half of the ricotta mixture, half of the mushroom-spinach mix, then sprinkle with mozzarella cheese. Repeat layers.
  5. For the final layer, add three noodles topped with more marinara sauce and remaining mozzarella and Parmesan.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 15–20 minutes until golden brown.
