  • 1 lb ground beef (or turkey)
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2 tbsp chili powder
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions and bell peppers until soft, about 5 minutes.
  2. Add ground beef (or turkey), breaking it apart as it cooks until browned, about 7 minutes.
  3. Stir in minced garlic and chili powder; cook for another minute.
  4. Add diced tomatoes (with juice) and drained beans; stir well.
  5. Bring to a gentle boil, then reduce heat to low. Cover and simmer for at least 20 minutes.
  6. Taste before serving; adjust seasoning as needed.
