  • 3 medium beets, peeled and diced
  • 2 cups green cabbage, shredded
  • 2 medium potatoes, diced
  • 1 large carrot, diced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 6 cups vegetable or beef broth
  • 1 tbsp fresh dill, chopped
  • Salt and pepper to taste
  • 2 tbsp cooking oil

Instructions

  1. Prepare your ingredients by peeling and dicing the beets, carrots, and potatoes into bite-sized pieces. Chop the onion finely and shred the cabbage.
  2. In a large pot over medium heat, add oil and sauté onions until translucent. Add garlic and cook for an additional minute.
  3. Stir in beets and carrots first; cook for about five minutes before adding potatoes and cabbage.
  4. Pour in enough broth to cover all vegetables by one inch; bring to a boil then reduce heat to simmer.
  5. Mix in tomato paste, salt, pepper, and dill. Cover partially and let simmer for about 30 minutes until vegetables are tender.
  6. Taste before serving; adjust seasoning if necessary. Serve hot with sour cream on top.
