  • 1 cup quinoa
  • 3 cups baby spinach
  • 2 oranges (or other winter citrus fruits)
  • 1/2 cup pomegranate seeds
  • 1/4 cup crumbled feta cheese
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar

Instructions

  1. Rinse quinoa under cold water. In a medium saucepan, combine quinoa with 2 cups of water. Bring to boil over medium heat, then reduce heat to low, cover, and simmer for about 15 minutes until all water is absorbed. Fluff with a fork.
  2. While quinoa cooks, wash baby spinach thoroughly; if using kale, remove tough stems and chop.
  3. Peel oranges and cut into bite-sized pieces.
  4. In a large bowl, combine cooked quinoa, greens, citrus pieces, and pomegranate seeds; toss gently.
  5. Drizzle with olive oil and balsamic vinegar; toss until evenly coated.
  6. Serve in bowls topped with crumbled feta cheese.
