  • 2 medium-sized sweet potatoes (about 400g), peeled and diced
  • 1 cup crumbled feta cheese (150g)
  • 1 cup dried cranberries (150g)
  • 1 small red onion (about 70g), finely diced
  • 2 tbsp extra virgin olive oil (30ml)
  • 2 tbsp balsamic vinegar (30ml)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss diced sweet potatoes in olive oil, salt, and pepper. Spread them on a parchment-lined baking sheet and roast for 25-30 minutes until tender and caramelized.
  3. In a small bowl, whisk together olive oil and balsamic vinegar.
  4. Once cooled slightly, combine roasted sweet potatoes with feta cheese, cranberries, and red onion in a large bowl.
  5. Drizzle the dressing over the salad mixture and gently toss to combine without mashing the sweet potatoes.
  6. Serve chilled or at room temperature.
