  • 1 whole branzino (about 1.5 lbs), cleaned and scaled
  • 1 cup Kalamata olives, pitted
  • 2 tbsp capers, drained
  • 1 cup cherry tomatoes, halved
  • 1 lemon, sliced
  • ¼ cup fresh parsley or basil, chopped
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the branzino under cold water and pat dry with paper towels. Place on a parchment-lined sheet pan.
  3. Drizzle olive oil over the fish and season it inside and out with salt and pepper. Stuff the cavity with lemon slices and herbs.
  4. Scatter olives, capers, and cherry tomatoes around the fish on the sheet pan.
  5. Bake in the preheated oven for 25-30 minutes until the fish flakes easily with a fork.
  6. Serve hot, drizzled with extra olive oil if desired.
