  • 3 medium beets
  • 4 oz creamy goat cheese

  • 2 tbsp fresh lemon juice

Instructions

  1. Preheat oven to 400°F (200°C). Wrap each beet in foil and roast on a baking sheet for 45-60 minutes until tender.
  2. In a pot, boil salted water and cook farro according to package instructions (20-30 minutes). Drain well.
  3. Whisk together olive oil, lemon juice, honey, salt, and pepper in a small bowl.
  4. Once beets are cool, peel and chop into bite-sized pieces. In a large bowl, combine cooked farro, chopped beets, crumbled goat cheese, and drizzle with dressing.
