  • 1 large egg

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour and baking powder; gradually add to the wet ingredients until just combined.
  5. Roll the dough out on a floured surface into a rectangle about half an inch thick. Spread raspberry jam evenly across the surface.
  6. Carefully roll the dough into a tight log and wrap it in plastic wrap. Chill in the fridge for at least one hour.
  7. After chilling, slice the log into rounds about half an inch thick and place them on prepared baking sheets. Bake for 10-12 minutes or until edges are lightly golden brown.
  8. Allow to cool on wire racks before serving.
