Mediterranean Lentil Salad is a refreshing and flavorful dish that combines tender lentils with crisp vegetables and a zesty dressing.

Ingredients

  • 1 cup green or brown lentils
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, finely chopped
  • ½ cup fresh parsley, chopped
  • ½ cup crumbled feta cheese (optional)
  • 3 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • 1 tbsp red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Rinse lentils under cold water. In a pot, combine lentils with 3 cups of water and bring to a boil. Reduce heat and simmer for 20-25 minutes until tender. Drain excess water and cool.
  2. While lentils cool, chop cucumber, halve cherry tomatoes, and finely dice the red onion.
  3. In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, salt, and pepper.
  4. In a large bowl, combine cooled lentils with chopped vegetables and parsley. Drizzle dressing over the salad and toss gently.
  5. Top with crumbled feta cheese if desired and mix lightly.
  6. Chill in the refrigerator for at least an hour before serving for optimal flavor.
