  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 3 tbsp extra virgin olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 1 cup cherry tomatoes, halved
  • 2 medium zucchini, sliced
  • 1 large red bell pepper, chopped
  • 1/2 cup pitted Kalamata olives, coarsely chopped
  • 1 tsp dried oregano

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. In a bowl, whisk together olive oil, lemon juice, garlic, and oregano.
  3. Marinate chicken in the mixture for at least 30 minutes.
  4. Chop cherry tomatoes, zucchini, bell pepper, and olives; arrange around the baking dish.
  5. Place marinated chicken on top of veggies and drizzle remaining marinade over everything.
  6. Bake for 30-35 minutes or until chicken reaches an internal temperature of 165°F (75°C). Serve warm.
