  • 1 lb lean ground beef
  • 1/2 lb Italian sausage (sweet or spicy)
  • 1 cup fresh spinach (chopped)
  • 1 cup carrots (diced)
  • 1 medium onion (diced)
  • 6 cups low-sodium chicken broth
  • 4 cloves garlic (minced)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix ground beef, Italian sausage, breadcrumbs, Parmesan cheese, minced garlic, parsley, egg, salt, and pepper until combined. Form small meatballs.
  2. Heat olive oil in a pot over medium heat; brown meatballs in batches for about 5 minutes each side. Remove and set aside.
  3. In the same pot, sauté diced onions and carrots until softened (4–5 minutes). Add minced garlic and cook for another minute.
  4. Pour in chicken broth; bring to a boil while scraping the bottom of the pot for flavor. Reduce heat to simmer.
  5. Return the meatballs to the pot along with chopped spinach; simmer for 10–15 minutes until spinach wilts.
  6. Serve hot with crusty bread or croutons.
