  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely diced

  • 2 tbsp lime juice (freshly squeezed)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  2. While cooling, chop the cherry tomatoes, red onion, and cilantro.
  3. In a large bowl, combine grilled corn kernels, black beans, cherry tomatoes, red onion, and cilantro.
  4. In a small bowl, whisk together lime juice and olive oil; pour over the salad mixture and toss gently to combine.
