  • 4 slices ciabatta or sourdough bread
  • 2 cups marinara sauce
  • 1 ½ cups fresh mozzarella cheese, shredded

  • 4 tbsp extra virgin olive oil
  • ¼ cup fresh basil, chopped

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice eggplants into half-inch rounds, sprinkle with salt, and let sit for 20 minutes to draw out moisture.
  3. Rinse and pat the eggplants dry, then drizzle with olive oil on both sides. Roast on a baking sheet for about 25 minutes until golden brown.
  4. In an ovenproof dish, layer bread slices at the bottom. Add roasted eggplant, spoonfuls of marinara sauce, mozzarella, and Parmesan cheese. Repeat layers until all ingredients are used, finishing with cheese on top.
