  • 3 large eggs
  • 1/2 cup vegetable oil (or applesauce)
  • 1 cup water
  • 1 quart vanilla ice cream (softened)
  • 8 oz whipped topping (store-bought or homemade)
  • Rainbow sprinkles (to taste)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two round cake pans.
  2. In a large mixing bowl, combine Funfetti cake mix, eggs, vegetable oil, and water. Mix until smooth.
  3. Divide the batter evenly between the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Allow cakes to cool completely.
  4. Place one cooled cake layer on a serving plate and spread a layer of softened vanilla ice cream on top.
  5. Add the second cake layer on top of the ice cream. Cover with plastic wrap and freeze for about 2 hours.
  6. Once frozen, spread whipped topping over the top and sides of the cake, then decorate with additional sprinkles before serving.
