Cottage Cheese and Butternut Squash Lasagna is a delightful twist on the classic Italian dish, featuring layers of creamy cottage cheese, sweet butternut squash, and gooey mozzarella sandwiched between tender lasagna noodles.   • 9 lasagna noodles
  • 2 cups cottage cheese
  • 2 cups diced butternut squash (fresh or frozen)
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 cup fresh spinach (chopped)
  • 1 tsp Italian seasoning
  • 3 cloves garlic (minced)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Boil diced butternut squash for about 8-10 minutes until tender. Drain and set aside.
  3. In a bowl, mix cottage cheese, half of the mozzarella, Italian seasoning, minced garlic, and spinach until well combined.
  4. Spread a thin layer of the cheese mixture on the bottom of the baking dish. Layer three noodles on top, followed by half of the cooked squash. Repeat layering until all ingredients are used.
  5. Finish with a final layer of noodles topped with the remaining cheese mixture and sprinkle with leftover mozzarella and Parmesan.
  6. Cover with aluminum foil and bake for about 30 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown. Allow to cool slightly before slicing.
