  • 8 oz spaghetti or Chinese noodles
  • 3 tbsp toasted sesame oil
  • 1/4 cup creamy peanut butter
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp unseasoned rice vinegar
  • 1 tbsp honey or maple syrup
  • 2 cloves garlic, minced
  • 1 cup cucumber, thinly sliced
  • 2 tbsp toasted sesame seeds
  • 2 green onions, chopped

Instructions

  1. Cook the noodles in salted boiling water until al dente. Drain and rinse under cold water.
  2. In a bowl, whisk together sesame oil, peanut butter, soy sauce, rice vinegar, honey (or maple syrup), minced garlic, and a splash of water until smooth.
  3. Toss the cooled noodles with the sauce until evenly coated.
