  • 1 can (15 oz) canned chickpeas, rinsed and drained
  • 1 cup crumbled feta cheese
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse and drain the chickpeas. Dice the cucumber, halve the cherry tomatoes, slice the red onion thinly, and chop the avocados into cubes.
  2. In a large mixing bowl, combine chickpeas, feta cheese, cucumber, tomatoes, red onions, and avocado cubes. Gently toss until mixed.
  3. In another bowl or jar, whisk olive oil and lemon juice together. Season with salt and pepper to taste.
  4. Drizzle dressing over the salad mixture and toss gently to coat without mashing the avocado.
  5. Chill in the refrigerator for about 30 minutes before serving to allow flavors to meld.
