  • 1 cup quinoa
  • 1 red bell pepper, chopped
  • 1 cucumber, thinly sliced
  • 2 carrots, shredded
  • 3 green onions, sliced
  • 3 tbsp natural peanut butter
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp freshly squeezed lime juice

Instructions

  1. Rinse quinoa under cold water until the water runs clear. In a medium saucepan, combine quinoa with 2 cups water or vegetable broth. Bring to a boil, then reduce heat to low and cover. Simmer for about 15 minutes until fluffy.
  2. While the quinoa cooks, chop the red bell pepper, slice the cucumber, and shred the carrots. Slice green onions as well.
  3. In a small bowl, mix peanut butter, soy sauce, and lime juice until smooth.
  4. Layer half the cooked quinoa in a jar followed by bell pepper, cucumber, carrot, green onions, and top with remaining quinoa.
  5. Drizzle the peanut sauce over the top layer before sealing the jar.
