  • 1 head cauliflower (about 1 lb), cut into florets
  • 1 lb lean ground beef
  • 2 tbsp olive oil
  • 2 tbsp taco seasoning
  • 8 small flour or corn tortillas
  • Toppings (lettuce, cheese, salsa) as desired

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss cauliflower florets in olive oil, salt, and pepper, then spread evenly on the baking sheet and roast for about 20 minutes until golden brown.
  3. In a skillet over medium heat, cook ground beef until browned (5-7 minutes). Drain excess fat if necessary.
  4. Stir in taco seasoning and ½ cup water; let simmer until thickened (about 5 minutes).
