  • 8 oz halloumi cheese
  • 4 cups mixed greens (arugula, spinach, baby kale)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 ripe avocado, diced
  • 3 tbsp hot honey (store-bought or homemade)
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon

Instructions

  1. Wash and prepare vegetables: halve the cherry tomatoes, dice the cucumber and avocado.
  2. Heat a non-stick skillet over medium heat. Slice halloumi into thick pieces and grill for about 3-4 minutes on each side until golden brown.
  3. In a large bowl, layer mixed greens as the base. Top with cherry tomatoes, cucumber, and avocado.
  4. Place grilled halloumi on top and generously drizzle with hot honey.
  5. Whisk olive oil and lemon juice together in a small bowl; drizzle over the salad before serving.
