  • 1 lb chuck roast, cut into bite-sized pieces
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 2 cups low-sodium beef broth
  • 1 cup shredded cheddar cheese
  • ½ cup fresh cilantro, chopped
  • 1 packet taco seasoning

Instructions

  1. In a large pot over medium heat, brown the chuck roast in a splash of oil until seared on all sides.
  2. Sauté chopped onions until translucent; add minced garlic and cook for an additional minute.
  3. Stir in diced tomatoes (with juices) and beef broth; add taco seasoning and bring to a boil.
  4. Reduce heat to low, cover, and simmer for about 2 hours until beef is tender.

  6. Place seam-side down in a baking dish, pour remaining sauce over enchiladas, top with more cheese, cover with foil, and bake for 20 minutes.
