  • 1 lb baby potatoes, halved
  • 2 bell peppers (any color), chopped
  • 1 medium zucchini, diced
  • 8 oz fresh mozzarella cheese (slices or balls)
  • 3 tbsp olive oil
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season chicken breasts with salt and pepper; drizzle with olive oil.
  3. In a bowl, toss halved potatoes, chopped bell peppers, and diced zucchini with olive oil and Italian seasoning until evenly coated.
  4. Arrange chicken on one side of a sheet pan; layer veggies on the other side.
