  • 1 boneless turkey breast (2 lbs)
  • 2 tbsp extra virgin olive oil
  • 2 tsp fresh rosemary, chopped
  • 2 tsp fresh thyme, chopped
  • 3 medium carrots, sliced
  • 2 bell peppers (mixed colors), chopped
  • 1 medium red onion, sliced
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the turkey breast dry and season with olive oil, salt, pepper, garlic powder, rosemary, and thyme.
  3. Chop the carrots, bell peppers, and red onion into bite-sized pieces.
