  • 2 cups chopped spinach
  • 1 cup sliced mushrooms
  • 1 cup diced bell peppers
  • 1 cup shredded cheese (mozzarella or cheddar)

Instructions

  1. 1. Prepare the batter: In a bowl, whisk together flour and salt. In another bowl, beat eggs and add milk along with melted butter or oil. Combine both mixtures until smooth.
  2. 2. Cook the crepes: Heat a non-stick skillet over medium heat and grease lightly. Pour half a cup of batter into the skillet, swirling to coat evenly. Cook until golden brown on one side (about 2 minutes) and flip.
