  • 2 skinless salmon fillets (6 oz each)
  • 1 head of iceberg lettuce
  • 1 medium cucumber, thinly sliced
  • 1 red bell pepper, diced
  • 2 green onions, chopped
  • ½ cup Greek yogurt
  • 2 tsp Dijon mustard
  • Salt and pepper to taste
  • Drizzle of olive oil

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Place the salmon fillets on the baking sheet, season with salt, pepper, and olive oil. Bake for 15-20 minutes until flaky.
  3. While the salmon bakes, mix Greek yogurt and Dijon mustard in a bowl; season to taste.
  4. Chop the cucumber, bell pepper, and green onions while the salmon cools slightly.
  5. Flake the cooked salmon into bite-sized pieces.
  6. Assemble by placing flaked salmon into iceberg lettuce leaves along with the veggies and drizzle with sauce. Serve immediately.
