  • 1 cup cooked quinoa
  • 1 medium bell pepper, chopped
  • 1/2 medium cucumber, diced
  • 1 medium carrot, grated
  • 1 cup baby spinach leaves
  • 1/2 ripe avocado, sliced
  • 2 large whole wheat tortillas
  • 2 tbsp dressing (vinaigrette or tahini), optional

Instructions

  1. Rinse quinoa under cold water. In a saucepan, combine rinsed quinoa with 2 cups water. Bring to a boil, cover, and simmer for 15 minutes until water is absorbed.
  2. While quinoa cooks, chop bell pepper, cucumber, carrot, and avocado into bite-sized pieces.
  3. Once quinoa has cooled slightly, layer it on tortillas followed by vegetables and optional dressing.
  4. Fold in sides of the tortilla and roll tightly.
  5. Cut in half diagonally and enjoy!
