  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 medium zucchini, sliced into half-moons
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup cherry tomatoes, halved
  • ½ cup freshly grated Parmesan cheese (or nutritional yeast for vegan option)
  • ¼ cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1 minute).
  3. Add zucchini, bell peppers, and cherry tomatoes to the skillet. Stir occasionally for about 5 minutes until the vegetables soften but remain slightly crunchy.
  4. Toss the cooked pasta into the skillet with sautéed vegetables. Add grated Parmesan cheese, chopped basil, salt, and pepper; mix well to combine.
  5. Serve hot with extra olive oil drizzled on top if desired.
