  • 1 cup quinoa
  • 1 ½ cups water
  • 1 medium English cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ medium red onion, thinly sliced
  • ½ cup pitted Kalamata olives
  • ½ cup feta cheese, crumbled
  • ½ cup fresh parsley, chopped
  • Juice of 1 lemon (about 3 tbsp)
  • 4 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water to remove bitterness. Combine with water in a saucepan and bring to a boil. Reduce heat, cover, and simmer for about 15 minutes until water is absorbed.
  2. While quinoa cooks, prepare veggies: dice cucumber, halve cherry tomatoes, slice red onion, and chop parsley.
  3. In a bowl or jar, whisk together lemon juice, olive oil, salt, and pepper for the dressing.
  4. Once quinoa cools slightly, fluff with a fork in a large mixing bowl. Add chopped veggies and gently toss together.
  5. Stir in Kalamata olives and crumble feta cheese on top; mix gently.
  6. Drizzle dressing over the salad while tossing lightly until combined.
