  • 1 lb lean ground beef
  • 3 medium zucchinis (sliced)
  • 2 cups shredded cheese (your choice)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • Cooking spray (for the baking dish)

Instructions

  1. Preheat your oven to 375°F (190°C). Spray a baking dish with cooking spray.
  2. In a skillet over medium heat, sauté chopped onion until translucent (about 5 minutes). Add minced garlic and cook for another minute.
  3. Add ground beef to the skillet and cook until browned, breaking it apart with a spoon (7-10 minutes). Season with salt, pepper, and Italian seasoning.
  4. In the prepared baking dish, layer half of the zucchini slices, followed by half of the beef mixture and half of the cheese. Repeat the layering process.
  5. Cover with foil and bake for 25-30 minutes. Remove foil during the last 5 minutes to allow the cheese to bubble.
  6. Let cool for a few minutes before slicing and serving warm.
