  • 1 cup apple cider
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Season the pork shoulder with salt and pepper. Use the 'Sauté' function on your Instant Pot to sear the pork on all sides for about 4-5 minutes until browned.
  2. Remove the pork and sauté chopped onions and minced garlic in the pot until fragrant, about 3 minutes.
  3. Pour in apple cider and apple cider vinegar, scraping up any browned bits from the bottom of the pot.
  4. Stir in brown sugar, cinnamon, paprika, salt, and pepper until combined.
  5. Return the seared pork to the pot, close the lid, and set to cook on high pressure for 60 minutes. Allow for natural release afterward.
  6. Shred the pork using two forks in the sauce before serving.
