  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/4 medium red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse and drain the chickpeas in a colander; let them air dry while preparing the veggies.
  2. Dice the cherry tomatoes, slice the cucumber, and finely chop the red onion.
  3. In a large bowl, combine chickpeas, tomatoes, cucumber, red onion, feta cheese, and parsley.
  4. In a small bowl or jar, whisk together olive oil and lemon juice; season with salt and pepper.
  5. Pour the dressing over the salad mixture and gently toss until well coated.
