Ingredients

  • 1 cup tri-color quinoa
  • 1 cup unsweetened dried cranberries
  • 2 medium fresh apples (Granny Smith or Honeycrisp), diced
  • ½ small red onion, finely diced
  • ½ cup fresh flat-leaf parsley, chopped
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. In a saucepan, combine quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed.
  2. Once cooked, let quinoa sit covered for 5 minutes before fluffing with a fork and allowing it to cool completely in a large bowl.
  3. While cooling, chop apples and finely dice red onion and parsley.
  4. In the bowl with cooled quinoa, add apples, cranberries, onion, and parsley. Toss gently.
  5. In a small bowl, whisk olive oil and lemon juice together; pour over salad mixture and toss until well coated.
  6. Chill in the fridge for at least an hour before serving.
