Ingredients

Scale
  • 3 lbs beef chuck roast
  • 4 medium carrots, chopped
  • 4 medium Yukon Gold potatoes, quartered
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Chop onions, slice carrots, and quarter potatoes.
  2. In a large pot over medium-high heat, heat olive oil. Season the roast with salt and pepper; sear until golden brown on all sides (about 5 minutes per side).
  3. Remove roast temporarily; sauté onions and garlic in drippings for about 3 minutes.
  4. Return roast to pot with carrots and potatoes. Pour in beef broth until veggies are just covered; add thyme and rosemary.
  5. Bring to a boil then reduce heat to low. Cover tightly and simmer for about 3 hours or until fork-tender.
  6. Let roast rest for 10 minutes before slicing. Serve with vegetables and gravy.
