  • 34 boneless skinless chicken breasts (1.5 lbs)
  • 2 cups cubed butternut squash
  • 1 cup wild rice
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 tsp fresh thyme

Instructions

  1. Preheat your oven to 375°F (190°C). Spray a large baking dish with nonstick cooking spray.
  2. Peel and cube butternut squash; toss with olive oil, salt, and pepper.
  3. Cook wild rice in a saucepan with chicken broth until tender (about 45 minutes).
  4. Season chicken breasts with salt, pepper, and thyme.
  5. In the baking dish, layer half of the cooked wild rice, seasoned chicken breasts, cubed squash, and pour heavy cream over everything.
  6. Cover with aluminum foil and bake for 35 minutes. Remove foil and bake for an additional 10-15 minutes until golden brown.
