  • 1 lb fresh littleneck clams
  • 2 medium Granny Smith apples, diced
  • 2 cups Yukon Gold potatoes, diced
  • 1 cup heavy cream
  • 4 oz thick-cut bacon, diced
  • 1 large sweet onion, chopped
  • 1 cup celery, chopped
  • 2 tsp fresh thyme leaves
  • 4 cups clam juice (or chicken broth)
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, sauté diced bacon until crispy. Remove bacon and leave about two tablespoons of fat in the pot.
  2. Add chopped onions and celery to the pot; sauté until softened (about five minutes).
  3. Stir in diced potatoes and apples; cook for three minutes.
  4. Pour in clam juice (or chicken broth) and bring to a simmer; cook until potatoes are tender (around ten minutes).
  5. Add cleaned clams and thyme; cook until clams open (about five minutes).
  6. Lower heat and stir in heavy cream; season with salt and pepper. Return crispy bacon before serving.
