  • 2 cups puff pastry
  • 2 medium onions, finely chopped
  • 1 cup mushrooms, sliced
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh rosemary, chopped
  • 1 cup beef or game stock
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet, heat olive oil over medium heat. Sauté onions until translucent. Add mushrooms and cook for another five minutes.
  3. Stir in diced game meat, seasoning with salt, pepper, thyme, and rosemary. Cook until browned on all sides.
  4. Sprinkle flour over the mixture and stir well. Gradually add stock while stirring until thickened; simmer for about ten minutes.
  5. Roll out half of the puff pastry into a baking dish. Pour in the meat mixture and cover with another layer of pastry. Seal edges by crimping.
  6. Brush the top crust with beaten egg and bake for 25-30 minutes or until golden brown.
