Ingredients

  • 4 cups chopped kale (about 1 bunch)
  • 2 ripe persimmons, sliced
  • 1 cup pomegranate seeds (from about 1 pomegranate)
  • ½ small red onion, thinly sliced
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons aged balsamic vinegar
  • Salt & pepper to taste

Instructions

  1. Wash and dry the kale thoroughly. Remove tough stems and chop into bite-sized pieces.
  2. Slice the persimmons into wedges or cubes.
  3. If using a whole pomegranate, cut it in half and gently tap out the seeds with a wooden spoon.
  4. In a large bowl, combine kale, persimmons, pomegranate seeds, and red onion.
  5. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  6. Drizzle dressing over the salad and toss gently until well combined. Serve immediately.
