  • 4 medium fresh cucumbers (about 1 lb)
  • 1 cup white vinegar
  • 1 cup filtered water
  • 2 tbsp sugar
  • 2 tbsp kosher salt
  • 4 dill sprigs
  • 3 garlic cloves (smashed)

Instructions

  1. Wash cucumbers thoroughly and slice them into thin rounds or spears.
  2. In a medium saucepan over medium heat, combine white vinegar, water, sugar, and kosher salt. Stir until dissolved and let it simmer for about 5 minutes.
  3. Remove from heat; add smashed garlic cloves and dill sprigs. Let steep for an additional 5 minutes.
  4. Pack cucumber slices tightly into clean jars.
  5. Pour the hot brine over the cucumbers until they are fully submerged, leaving half an inch of space at the top.
  6. Allow jars to cool before sealing with lids and refrigerating for at least 4 hours.
