Crunchy Chickpea and Kale Caesar is a vibrant twist on the classic Caesar salad, featuring crispy roasted chickpeas and tender kale drizzled in a creamy, tangy dressing. Ingredients

  • 4 cups fresh kale, chopped
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 2 tablespoons olive oil
  • ½ cup freshly grated Parmesan cheese
  • ½ cup Greek yogurt
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Spread chickpeas on a parchment-lined baking sheet. Drizzle with olive oil, season with salt, and toss to coat. Roast for 25-30 minutes until golden and crunchy.
  3. While chickpeas roast, wash and chop kale.
  4. In a bowl, mix Greek yogurt, lemon juice, Dijon mustard, salt, pepper, and half of the Parmesan until smooth.
  5. Toss chopped kale with dressing until evenly coated. Top with roasted chickpeas and remaining Parmesan.
  6. Serve in bowls and enjoy!
