  • 14 oz firm tofu, drained and pressed
  • 1 cup bell peppers (mixed colors), chopped
  • 1 cup broccoli florets, chopped
  • 1 cup carrots, sliced thinly
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp olive oil
  • 1 tsp garlic powder

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Drain the tofu and press it between paper towels for about 15 minutes.
  3. Chop the bell peppers, broccoli, and carrots into bite-sized pieces.
  4. In a large bowl, combine the pressed tofu and chopped veggies. Drizzle with olive oil and soy sauce; sprinkle with garlic powder. Toss gently until coated.
  5. Line a baking sheet with parchment paper and spread the tofu-veggie mixture in an even layer.
  6. Bake for 25-30 minutes until golden brown and crispy around the edges.
