  • 3 cups cooked turkey, shredded
  • 8 oz thin spaghetti or linguine
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup whole milk
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded parmesan cheese
  • 2 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 8 oz fresh button mushrooms, sliced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a large baking dish.
  2. Cook pasta until al dente according to package instructions; drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Sauté onions and garlic until fragrant. Add mushrooms and cook until golden brown.
  4. In a large mixing bowl, combine cream of mushroom soup and milk. Stir in sautéed veggies, turkey, cooked pasta, and half of the mozzarella and parmesan cheeses.
  5. Pour the mixture into the prepared baking dish. Top with remaining cheese.
  6. Bake for 25-30 minutes or until bubbly and golden brown. Let cool briefly before serving.
