  • 1 medium delicata squash (about 1 pound)
  • 8 oz fettuccine or penne pasta
  • 2 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1/2 cup grated Parmesan cheese
  • 1 tsp fresh thyme or sage
  • Salt and pepper to taste

Instructions

  1. 1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. 2. Slice the delicata squash in half lengthwise, scoop out the seeds, and cut into half-moon shapes about one inch thick. Toss them with olive oil, salt, and pepper on the baking sheet.
  3. 3. Roast the squash for 25-30 minutes until tender and caramelized.
  4. 4. While the squash roasts, boil salted water in a large pot. Cook pasta according to package instructions until al dente, reserving some pasta water before draining.
  5. 5. In a skillet over medium heat, add more olive oil if needed and sauté minced garlic until fragrant. Add roasted squash and reserved pasta water to create a sauce.
  6. 6. Toss the cooked pasta into the skillet with squash, mixing well for one minute on low heat. Top with Parmesan cheese and fresh herbs before serving.
