  • 1 cup roasted chestnuts
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Chop pumpkin into cubes, dice onion, and mince garlic.
  2. In a large pot, heat olive oil over medium heat. Sauté onion and garlic until translucent, about 5 minutes.
  3. Add pumpkin cubes and vegetable broth; bring to a boil before reducing heat to simmer for 20 minutes until tender.
  4. Blend the mixture until smooth using an immersion blender or regular blender.
  5. Return to low heat; stir in coconut milk and roasted chestnuts. Simmer for another 5 minutes.
  6. Season with salt and pepper, then serve hot garnished with extra chestnuts or a drizzle of coconut milk.
